Ask a maven about the Festival of Shavuot, and you'll get enlightened on the "first fruits" of the wheat harvest in Israel, if not on the giving of the Torah at Mount Sinai. But dairy lovers know the true meaning of the late Spring, early Summer holiday: an excuse to eat blintzes.

This Shavuot, we came across a novel twist on the cheesy carb standby. Enter Ricotta-Fruit Toast. The Forward's Leah Konig has the recipe. And yes, those green things sprinkled among the strawberries and cherries are pistachios. A little extra protein for this feast of revelation.
